Why Food Matters II

This course, offered in the spring, will highlight the preparation needed for the local growing season. It will also identify the environmental and political impact of bringing foods to the marketplace. Emphasis this semester will be on energy consumption, environmental impact, and the political framework in which farmers, distributors and retailers have to work. Students will also operate a small farm share business by growing, harvesting, and selling vegetables and bedding plants.
